This machine is indispensable for the production of high quality chocolates. It is controlled automatically, adhering to the temperatures required by each phase of the chocolate tempering process, so as to guarantee the uniform quality of the product. It has a vertical structure, the chocolate mass is fed by one side of the machine and passes through different areas where the chocolate changes its temperature according to the specific tempering curves for each type. The already tempered chocolate comes out of the upper part of the machine.
After this process, the chocolate will be well crystallized, with a uniform appearance and taste, good finish and long storage life.
The machine has heaters for circulating hot water and its own cooling system.The temperature control in the different temperature zones is fully automatic.
